Chardon debuted on Friday, Feb. 21, on the Thompson Houston’s ground level, with its street-facing entrance next to neighboring restaurant Toca Madera. It became the hotel’s high-end restaurant offering; Sol 7 had opened around the same time the previous year on the rooftop.
